ONION PIE WITH PANCETTA

INGREDIENTS (serves 5):
Dough
  • Flour 7oz (200g.);
  • Butter 3.5 (100g.);
  • 1 egg yolk;
  • Salt;
Stuffing
  • Yellow onions 18oz (500g);
  • Butter 2tbsp.;
  • 4 eggs;
  • Pancetta 60z (150g.) cut into small cubes;
  • 1 cup (240ml.) of Cream;
STEPS:  
  1. Sift the flour; add the egg yolk, the butter and a pinch of salt. Mix gently with your fingertips. Add a little water if necessary. Form a ball of dough and place in a cool place for 1 hour;
  2. Preheat the oven to 180°C;
  3. Cut the onions into thin rings, spread the butter in a deep frying pan, add the onions and cook the onions slowly over medium heat so they don't brown until soft and translucent;
  4. Beat the eggs with the cream and a pinch of salt, add the pancetta and cooked onions;
  5. Using your fingertips spread the dough on the bottom of the spring form pan;
  6. Spread the onion mixture on top of the dough;
  7. Send into the preheated oven for about 30 minutes.
